Raw Taco Salad

Walnut Meat

  • 1/2 Cup Walnuts Soaked for 2-8 hours. If you don't have time to soak the walnuts, see below for instructions.
  • 2 Tsp Chili Powder
  • 1 Tsp Cumin
  • 1/2 Tsp Cayenne Pepper
  • Salt and Pepper to taste

Creamy Cilantro Sauce

  • 3/4 Cup Raw Cashews
  • 1/2 Avocado
  • 1 Juice of 1 Lime
  • 1/2 Cup Cilantro
  • 2 Cloves Garlic
  • 1/2 Cup Water
  • Salt and Pepper to taste

Salad Veggies

  • Romaine Lettuce
  • Tomato
  • Cucumber
  • Green Onion
  • Bell Pepper

  1. Begin by soaking your walnuts for 2-8 hours. If you don't have time to soak the walnuts, simply add 1-2 tbps of water to food processor until you reach desired "walnut meat" texture. Start small and add until it looks, tastes and feels right for you.

  2. Add all ingredients for walnut meat to food processor or high powered blender and mix until fine and "meaty". Set aside.

  3. Add all ingredients for creamy cilantro sauce and add to blender and blender until creamy. Set aside.

  4. Chop desired veggies for salad and arrange on a plate. Top with 1/4 cup of walnut taco meat and top with 1-2 tbsp of creamy cilantro sauce.

  5. Enjoy!
