This is my vegan steel cut oat recipe with dates. Oatmeal is one of my favorite breakfasts on days when I'm going to be really active or when I don't have much food left in my cupboards.This is a really easy recipe and you can substitute your favorite fruits into this recipe. Try to use steel cut oats whenever you have the time as they are not as processed as other oats. If you are short on time, rolled oats are fine but try to stay away from instant oats.I love putting dates in my oats as they fiber, potassium, and they have a low glycemic index which means they aren't going to give you a sugar pike but the sugar in them will add flavor to the oats.Enjoy and be sure to share this recipe with a friend.

Ingredients
1/2cupsteel cut oats
3cupswater
2medjool datesfinely chopped
1bananachopped
2tbspshredded coconut
1/2cupfrozen peachesoptional
1/2cupfrozen strawberriesoptional
Instructions
Bring water to a boil.While waiting for water to boil, finely chop your dates. If there are pits, but sure to remove pits before chopping.Once water is boiling, add oats and dates. Bring water to a simmer and cook for 25-30 minutes, until oats are at desired consistency.**If adding optional frozen fruit, add when there is about 5-10 minutes left of cooking time**Split oats up between two bowls and top with bananas and shredded coconut.
