This salad is hearty and full of flavor. It might be a little different than the taco salad you grew up with, but trust me, it’s just as tasty!
The raw walnut taco “meat” really cranks this salad up a notch. The walnut taco meat combined with this creamy cilantro sauce creates the perfect combination to make this a satisfying, yet healthy meal, for either lunch or dinner.

Raw Taco Salad
Ingredients
Walnut Meat
- 1/2 Cup Walnuts Soaked for 2-8 hours. If you don't have time to soak the walnuts, see below for instructions.
- 2 Tsp Chili Powder
- 1 Tsp Cumin
- 1/2 Tsp Cayenne Pepper
- Salt and Pepper to taste
Creamy Cilantro Sauce
- 3/4 Cup Raw Cashews
- 1/2 Avocado
- 1 Juice of 1 Lime
- 1/2 Cup Cilantro
- 2 Cloves Garlic
- 1/2 Cup Water
- Salt and Pepper to taste
Salad Veggies
- Romaine Lettuce
- Tomato
- Cucumber
- Green Onion
- Bell Pepper
Instructions
- Begin by soaking your walnuts for 2-8 hours. If you don't have time to soak the walnuts, simply add 1-2 tbps of water to food processor until you reach desired "walnut meat" texture. Start small and add until it looks, tastes and feels right for you.
- Add all ingredients for walnut meat to food processor or high powered blender and mix until fine and "meaty". Set aside.
- Add all ingredients for creamy cilantro sauce and add to blender and blender until creamy. Set aside.
- Chop desired veggies for salad and arrange on a plate. Top with 1/4 cup of walnut taco meat and top with 1-2 tbsp of creamy cilantro sauce.
- Enjoy! **this will be enough walnut meat for 2 salads**
