Vegan Cherry Garcia Nice Cream

When I first went plant based, there a problem I needed to solve…

Ice Cream!

Growing up, ice cream could have easily been considered one of my food groups. I had a smallish dish, okay maybe a large dish, of ice cream after dinner on most nights. It’s what I did.

When I went vegan, replacing ice cream wasn’t a problem because there were so many vegan ice creams to choose from. In fact, there are some cashew ice creams out there that are actually better than dairy ice cream, IMHO.

But when I went plant based…now what was I going to do?

No more processed sugary foods meant, no more vegan ice cream.

Well, I quickly learned about making nice cream. Now, I’m not gonna lie; I was super skeptical.

I mean really, bananas. Bananas are supposed to replace ice cream.

And you know what? They actually do the job!

Cherry Garcia was always my favorite ice cream. Cherry and chocolate…that’s my jam right there.

So, making a Cherry Garcia Nice Cream quickly became the problem I needed to solve.

I’ve tried a couple of different variations and this is by far my favorite.

Now, you know what to do. It’s Cherry Garcia time!

Vegan Cherry Garcia Nice Cream

  • 1/2 Cup Frozen Cherries
  • 1/4 Tsp Vanilla Extract
  • 1 Tbsp-1/4 Cup Plant Based Milk as needed
  • 1 Tbsp Vegan Chocolate Chips

Instructions

  • Add bananas, cherries, vanilla and milk to blender. Blend until desired consistency. Add the chocolate chips and blend till chopped and mixed. Top with a couple more chocolate chips if desired.
